I have found yet another very interesting read on prevention as a control of risk factors to be a better choice than medical intervention, Prevent and Reverse Heart Disease. The book is by Dr. Caldwell Esselstyn he promotes a vegan diet, no mother, no face, no cheese, as a solution to heart disease. Don't panic the solutions are tasty, really.
I love the persuasive before and after pictures of angiograms. You can see the stress on the arteries and three years later the same photo shows the occlusion is gone only 32 months on a plant based diet. No cholesterol lowering medications, no stints, no cracking open your chest with bypass surgery, just a beautiful healthy life on a plant based diet.
We have found within the experience of our own office personal when you change your eating habits and you move away from eating toxic foods like fast foods, non organic foods, or Halloween candy, you will experience a short withdrawal period of craving. Once the craving is over it is smooth sailing.
The first 126 pages of the book give you facts to entice you to make certain dietary choices and reasons why. After that comes the recipes many of them are very tasty and have the indicator of a healthy meal, beautiful color.
What I do at our home is to introduce one or two of these recipes each week. I frequently hear this is good what is in it? I always write in my recipe books the date we tried the recipe and comments heard around the table. Sometimes I hear, “Please don’t fix that again.” which is OK, and makes them appreciate the recipes they like.
